We have a similar setup as far as the software used; you can configure the antispam plugin to do various things in the backend, and it sounds like our configurations are a little different there, but this is what we have (based off the setup for DTC control panel): We have 3 email addresses setup which you can forward messages to for training, train-spam@domain, train-notspm@domain and train-forget@domain. Those all deliver to a perl script (sa-wrapper.pl) that calls spamc for training. (These addrs are tested working, and useful in their own right.) We set the dovecot-antispam plugin to use the pipe backend, which calls another script (sa-remailer) which takes the message on stdin and forwards it as an attachment to the appropriate train-*@domain address. We don't change the subject line upon retraining, so can't help there, but if you want any of the other pieces I can dig up config snippets/etc., just let me know what you need.
