For the Eclipse + Tapestry part i recommend Kent's 
book(http://www.agileskills2.org/EWDT/index.html), it's not free not in 
my opinion very worth the money.
As for Maven, you should download this free book 
http://www.mergere.com/m2book_download.jsp.

With this you should be up and running very quickly....
