I have used Jetty, Tomcat and Glassfish without any problems. Well without any Tapestry related problems. I haven't ever had a need to use JBoss. I think you might be able to get it to work, but you might have to learn a whole lot more about how JBoss operates behind the scenes to get it to work correctly. I'd recommend switching (or at least trying) on of the other options. Jetty is particularly attractive because that is what most people are developing with. So if there is a problem, it is likely to show up quickly.
