I was hoping to use tapestry-ioc and tapestry-hibernate and not having to
bundle tapestry-core also.
tapestry-hibernate-core is what you're looking for:

package that adds Hibernate integration to Tapestry-the-web-framework and
it depends on tapestry-hibernate-core too.
