Add the jar(s) to tomee lib and set openejb jaxrs providers system
property: openejb.cxf.jax-rs.providers=moxyqualifiedname

Using openejb-jar.xml or adding it in classes in your jaxrs application
works as well:

This is weird since we have a jaxb provider by default - cxf one. Maybe
something to investigate. For xml i never got any issue but i know cxf jaxb
provider has some more config for it. If you speak about json you can still
activate cxf one just adding back jettison.
