You might want to check out Wicketopia. It has logic for handling this kind of stuff and it might even do some of it automatically for you.
http://wicketopia.sourceforge.net/ Download it from SVN, build it, and run the example application. There is an example in there that hides/shows the "SSN" field based upon whether or not the logged in user is an "admin."
