There weren't any changes to the schema between 2.7 and 3.0 and when there are, the database is updated automatically on first start. What is usually done is to import a database dump then after that, import the default (small) .xar file which allows you to update the documents which contain code that makes the wiki function, note that some documents should be excluded from the upgrade, see: http://platform.xwiki.org/xwiki/bin/view/AdminGuide/Installation#HUpgradinganXWikiInstallation for more information.
