Yes the default extensions that come with XE are hard dependencies of XE so not easy to uninstall alone. I also agree that there is too much stuff by default, we plan to work on a more minimalistic base with various flavors.
What makes the blog application being injected in the application panel is /xwiki/bin/view/Blog/ApplicationsPanelEntry page. I guess the simplest is to delete that page, you can always restore it from the trash if you want blog back in the application list.
