Honeywell makes them as well as other brands (White Rogers). 
You can buy them from Grainger or McMaster if you have a commercial account.
If not, you can find them in Home Depot.
I use at home a very nice one (Honeywell). It is the modern version of the
old round mercury type thermostat. The new version is programmable and can
switch to Celsius as well as to 24-hour time. They sell in Home Depot for
about $80 US. 
In terms of switching there is no "one" button, instead you have to press
two buttons in the same time to switch to F or C. Pretty basic operation.

Does any reader know where one can purchase a digital readout, programmable
or non-programmable, celsius indoor thermostat for heating and cooling?
How about one with fahrenheit OR celsius readouts, switchable via a switch
easily accessible (not by opening up the entire thing and changing wiring
or a jumper)?

I checked the Honeywell site and couldn't find what I need. I did find a
non-programmable unit at Home Depot that advertised that it was selectable,
but you need to change a jumper inside before you mount it on the wall.  I
would prefer a switch.
