Why would anyone buy a thermometer that can display in Fahrenheit?  Why not
just buy one in degrees Celsius only and there would be no need to worry
about switches?  Since you already bought it, why not open it up and remove
the switch.  In its place, solder in jumpers that will permanently display
the degree Celsius themperature.  Once you go metric, never go back.
Every thermometer and thermostat in my house reads in Celsius only.  For the thermostats, it's going to the back and turning a screw.  My wife now has forgotten Fahrenheit!  ("Carleton, the TV said it will be 59 tomorrow, what is that?"  "15."  "Oh, okay, thanks."   It can be done.
