In it, they give this advice:
"A final note: When it comes to measuring ingredients, Reimers said, “if you’re 
serious about making bread, move to the metric system.” She prefers to weigh 
her ingredients instead of using measuring cups (it’s easier, neater and more 
accurate) and recommends home bakers try it out with a kitchen scale."
 
Then they give the recipe solely in Customary units.  If it's better, couldn't 
they give the metric, even in parentheses, so readers COULD try it?
