As far as I understand, f32 (64bit IQ) is converted to sc16 (32bit IQ)
Then the time for the transmission will be :

T = 2CH*1000*(32bit/sample)/(10*10^9bps) = 6.4us

Then maximum possible sampling rate for each channel would be :
SR_max = 1/(6.4ns) = 156.25Msamples/sec

This should be ok with the X310 of 100Msps rate..
Please correct me if my calculation is not right.
There might be some overhead on the packet transmission, then how much should I take that into account?

Yes, although sample-rates are necessarily strictly related to the clock, which is 200MHz.
