I'm just a user of V8 (not a developer), but I don't think there would
be any licensing issues. V8 and the included software appear to use
the BSD license. In my opinion, this is a very generous and open
license.
I'm not a lawyer, and I do not intend for my advice to be taken as the
sole basis for your use. It would be wise to read the license and look
for explanations as well. :)
Here's a rewording of the BSD license:

This page shows the licensing applicable to V8 and included
components: http://code.google.com/apis/v8/terms.html
Here's a page that shows the BSD license:
http://www.opensource.org/licenses/bsd-license.php
Here's a short explanation and guide to using the license:

I hope this helps,

P.S. By the way, are you thinking using V8 on MINIX? :D
