Postfix.  All day long.  (Or Exim, if you really want.  Either will do.)
Sendmail used to be, by far, the most popular MTA, but its day is
largely gone, and the documentation for it -- the dreaded "Bat Book"
from O'Reilly among them -- can be impenetrable.  25 years ago, it was
the gold standard.  Now, well, yeah.  Go with something that's modern,
relatively secure, and relatively easy to set up.  Both Exim and Postfix
fit that description, and I've been perfectly happy with Postfix for
quite some time. Good luck!
