but can't really say what's wrong with it...

No, that indicates that it didn't stop Varnish (probably because it wasn't
running), but it *started* it successfully.
Have you verified that it is indeed not running (via ps, lsof, etc.)?

My guess is that when varnishd is runs, it switches from root to nobody,
and nobody doesn't have the right permissions for that directory.
I don't know about compilation, but in Varnish 3 the -u and -g options
control
the user and group to which Varnish will drop.
