Hi there, just to be clear: you'd want Varnish to hold the history of counter values in memory for you, right?
It's not going to happen, simply because it's not Varnish role to do this, but rather a monitoring solution's. What varnish/varnishstat will give you is a snapshot of the counters, at the time you ask for them. So, if you want to get a value over a period, you'll need to ask for the values at the beginning and end of the period and do the subtraction. However, various tools can help you with that, for example collectd ( https://collectd.org/) works pretty well. I'm sure people on this list will have their own recommandations.
