Sounds like it's time for the wonders of rsync.
 
Install the LAMP stack as you'd like it, figure out what directories need to be backed up, provide a simple script to snapshot content.
 
Student arrives, student logs into VM, student issues a single command to restore context from previous class. Content is small, a few seconds of network activity, they're ready to go.
 
Only issue I can see is student needing to snapshot their stuff at the end of class. If they forget, they're losing a class worth of effort. Trying to automate this would place the burden on the maintainer rather than student and that would be dramatically more complex, given that they don't get the same seat each time they are in class.
 
If a student completely ruins a VM, reinstall would be simple if the base system were made available as an OVA.

I do want to run the virtual machines on the Windows machines.

The problem lies at that students do not necessarily take seat at the same machine from class to class.

So I want to serve their virtual disks from the network.
