It shows up as a combobox on a GNU/Linux host. I haven't used VirtualBox on a windows host for a couple of years, but I seem to recall it also shows up as a combobox. You can use up/down arrows to change the settings. You can also just do: vboxmanage modifyvm <guest> --audiocontroller hda if you would find that easier, where <guest> is the name or UUID of your guest machine.
