Dont quite understand:
I have this set:
File -> preferences-> Network-> Host-Only Network

Then I have my VM settings:
Details-> Network->Adaptor 1 = PCNet-FAST III (NAT)
so you are right my VM does use NAT.

But how to change?
If I right -click on the VM icon "Settings" is grayed out"

 It seems you're using NAT network attachment. You need to change it to
Host-Only in VirtualBox network settings UI for your VM.
