Edit the ~vpopmail/domains/virtual_domain/.qmail-default file and change
the last parameter to an email address of the form: user@domain

Item #3 says how to bounce the mail instead.

More detailed information could probably be obtained from the Qmail
mailing list (DJB has a link to it from his web site, http://cr.yp.to).
You may want to browse though the archive first, as the Qmail list is
fairly high volume (and also to save asking a question that was answered
multiple times already, but not documented).
