How many processes can your machine handle?  How fast is your IDE drive, how much other crap are you running on the server. There is no single answer to your question other than "it depends" and it depends on a lot of stuff. With only 500 domains, your concurrent settings are probably just fine. I've got a server with 2500 domains, and I leave my local at 10 and remote is cranked up to 255. That is obscenely high and way more than necessary for most situations. Twenty is reasonable, 50 might be a little better depending on the activity levels and load of the machine.
 
You seem to care about your mail server yet you use IDE drives. Why is that?

What would be the recommended number for local and remote deliveries....
 
on our qmail+vpopmail4.9.8-1(cdb) running on p3, 512 mb ram, ide hdd with around 500 domains.
