I just did a similar thing the other day with Drupal -- I just do an svn delete on all the folders to be replaced, commit, then bring in the new ones and do an svn add. It's simple, but has the downside of these folders losing their history. Merging would probably help that problem, but I've never taken the time to learn how to do it the right way since I won't be needing the history of those folders. Hopefully someone else will tell us what the right operation would be.
