My advice is to never ever ever click on those links unless A) there is tangible context behind sending the link (I never send emails anymore saying something short like "check this out!" and B) read the text in the URL. If if doesn't go to a .com or .org or it looks like a bunch of jibberish, it is best not to click on it and simply ask the sender what the link is about. It may be a legitimate website after all, but better safe than sorry.
Once you click on it, you continue the circle of life as it pillages your email account for contacts.
