I use Arctic Sheep Wool for streamers.  In fact, sometimes it is labeled as 
"Streamer Hair".

I suppose you could spin it, but Lambs Wool is really what you want for the 
type of fly you mention in your post.

If you want a good pictoral tutorial, go to Robert Morger's website.  The 
URL is http://www.wwjournal.com .  He has a good tutorial there on spinning 
and stacking wool.
