Don't know much about the Savannah area, but a couple hours south on St. Simon's Island, Larry Kennedy has an Orvis shop there and is a well-respected guide for fly-fishing.  The name of the shop is The Bedford Sportsman South, 3405 Frederica Rd., St. Simons Island, GA 31522  (912) 638-5454.  They also have a web site.
 
I would check around the Hilton Head area, I'm pretty sure there's someone who guides out of there.  Up a little further in Beaufort there is Bay Street Outfitters, another Orvis shop. (843)524-5250. 
 
Those might be a good place to start.
 
As for species.  specked trout and redfish are the two most likely to encounter.  Sripers are also common.  I'm not sure about the "season" on them though.  Not much in the way of wadable water along the GA-SC coast, but plenty of places for boats--you WILL need a guide back up in those marshes.
