I prefer poached. Seriously, I have only steamed components of flies while tying. If you have crumpled unruly feathers, gently steaming them will bring them back to their original shape. Try it with turkey after trying to get a wing to seat right; you'll be amazed at how well the fibers straighten and remarry. No more secrets...
