        Here's what I use:

Dry seasoning:

       11 Tbsp. Salt
       4 Tbsp. Cayenne pepper
       3 Tbsp. Granulated garlic
       3 Tbsp. Black pepper
       2 Tbsp. Chili powder

 Combine all ingredients in a small mixing bowl, making sure they are well blended.

Injectable marinade:

Melt 1 pound of butter and remove from heat.  Add 2 tablespoons of the dry seasoning to one pound of melted butter.  Mix together very well.

Makes 16 fluid ounces.

NOTE: Inject about 1-� ounces of marinade mixture to each pound of turkey.  This recipe yields enough marinade for a 12 pound turkey.  Generously coat the inside and outside of the turkey with the dry seasoning blend.


        I set the temp of the oil to slightly above 350 degrees F, usually to about 375, before putting the turkey in.  The turkey always brings a temp drop in the oil, so I try to compensate.  I fry the turkey for 3 mins 15 secs per pound, seems to work out just about right with my method.  Make sure you stabilize the temp at 350 degrees after you've put the bird in the oil.
