Patrick, I am not Byard but I may be able to help you.  The saddle feathers are for 
dry fly hackle.  The spey feathers are for spey flies, like to use for steelhead, and 
the brahma hen are a spectacularly colored soft hackle for tying soft hackle flies.   
The flatwings are for long flowing flatwing streamers, used in saltwater and bass 
fishing.
