I have used instant potato flakes for years with fish. Take a fillet, dip it
in egg and buttermilk whipped together, roll it in instant potato flakes
then "Slip" it into hot oil. Turn when golden brown. At 8,000' with a
dusting of snow on the ground right by the river it is fabulous. Here at
3,278' and 100� it is still fabulous. Best recipe I ever had on fish.
