I would definatly go with the Awesome Hair patterns that DonO has already pointed you out to. It's a wonderful product and easy to tie with, plus it looks great in the water. Another plus is that Byard carries it!

I would think that Icelandic Sheep would be fine. Even EP fibre's if you have them. The way I tie my awesome hair/EP/ect style flies is have a colomn of white bucktail or white(almost clear) supreme hair at an angle other then along the hook. I tie it in towards the rear. This makes sure the material does not just all bunch down along the hook shank and I have found that it gives it a better profile, IMHO.

Hope this helps!! Now, Back to the lake for some more C&W. The big grass mats are just too tempting to NOT throw a scum frog in there, plus we're taking monster bass. Shore line cover doesnt allow me to get a fly rod out there. Fishin' is Fishin'!
