I went bowfishing with some guys rigged out to clean and process gar. They had a couple of 2by's nailed together in a 90 degree angle and you placed the fish in the center and started cracking backs. Once the meat is removed it is remarkably white meat.

I've eaten alligator gars (when I lived in New Orleans) but I've never eaten
the long-nosed gar.  An alligator gar caught in Lake Pontchartrain or the
swamps was pretty god eating, prepared properly.  We just wouldn't eat the
6' monsters we caught in the drainage ditches.

Cleaning them requires an axe.
