I don't remember seeing a lot of recreational fishing when I was in Israel.
Jaffa was an artist/fishing port.  Most everyone I saw was fishing out of
necessity.  One day I saw a diver with a spear come out of the water with
his catch of the day for the restaurant he was working for.  He was catching
small octopus just off the pier.
In Tiberias/Galilee they prepared and served the fish they caught whole.  I
still regret not ordering the fish now but at the time it didn't look too
appealing to me.  Since I started studying more of my bible I realized I
missed a very special memory.  I can still say I sat at the same table with
these fish though.  ;)
I would think there is sport fishing on the Red Sea although I saw more
diving than fishing trips.  It's a little different there because three
borders come together in a very small area so the border patrols are out in
boats.  It maybe wouldn't make for the best "fishing" experience but it's
beautiful.  I could see the baby octopus there below my feet while I was
swimming and Lion fish just off the shore through an underwater observatory.
I would love to go back.  My friends' parents are in Ramat Gan so maybe one
day I will go back with her to visit.

Actually, most of Israel doesn't keep kosher. However, when it comes to
pork, most don't eat. It is mainly the Russian immigrants and some of the
'wanna be's' who do.
In Tel Aviv for example, it is getting harder and harder to find kosher
restaurants.
Worst of all, the fishing sucks!!!
