Having lived in the area for a number of years and also flying a lot, I would recommend Flower Mound, Double Oak, Grapevine, and the area around it.  Unfortunately, everyone has found out about these areas but they are still nice and a quick trip to the airport.
 
Very nice flyshop used to reside in the Park Cities area of Dallas.
