For full dressed salmon flies you can't beat a hands on lesson from a pro.
If it isn't in the budget than a book I would suggest comes from a mentor of
mine...
Building Classic Salmon Flies by Ron Alcott.  It comes in a spiral bound
version which is great because it will lay flat so you can reference the
pages while you tie.
Mike Radencich has a DVD that details tying a Jock Scott.  The nice thing
about this is the Jock Scott has about every step you will encounter in full
dressed salmon flies and you can tie along with the DVD and pause it or back
it up when necessary.  It is well worth the money also.
