Rodney,
You don't have to remove the meat (I do) on the
Pheasant wings like I told Chuck to do in the Turkey
wings, lot more meat on the Turkey. You can just split
the skin and put as much Borax in the cut as you can
get in it. It will harden and get crusty, remove when
it does and if  still looks like it is not dried out,
repeat. You can remove the Borax residue from the
feathers later with a fresh slice of sliced white
bread.
