I've watched Bob and Lefty do it, so I know it's there.  But somethimes the
bend is so slight you can hardly see it, as in that photo, but it is there.
If you put a straight edge across the hook in the photo, you'll see the bend
a little better.

Bend the hook just behind where the eyes will fasten down, just a few
degrees to where you're bringing the point of the hook away from the eye
(best way to explain it??)

If your hook is in the vise point down, bend the eye and a short portion of
the shank upwards just 3 to 5 degrees.  There, that's better.  Then tie the
fly as shown, upside down.
