Hi Mike:
I'd recommend for that getting an inexpensive video capture card and then
using a security camera. They're not all that expensive (figure $200 for
camera and power supply and $50 for a BTTV card.) Then you can go for much
faster shutter speeds. The Sony HAD-type cameras are a good bet...
