have a look at the mjpegtools (http://mjpeg.sf.net or
http://www.sf.net/projects/mjpeg). The MPEG encoder mpeg2enc can convert
YUV streams to MPEG, mp2enc can convert WAV audio streams to MPEG audio
and mplex can combine the audio/video streams to a MPEG file.

There's also a more detailed description available (MJPEG-HOWTO) on
http://www.sf.net/projects/mjpeg -> documentation. It includes a section
on how to use mpeg2enc/mp2enc/mplex.
