Make sure you select the "Fast Start" option when exporting Quicktime.

Also, it sounds like you are using Internet Explorer for your web browser.
Internet Explorer sabotages Quicktime, something we've explored on
this list previously.
IE will only allow quicktime to fast start if it is embedded in an
HTML page, otherwise IE will have to download the entire file before
it begins playing. This has something to do with the way IE handles
video objects with ActiveX.

FireFox, and every other browser it seems, will correctly play
quicktime with fast start.

It may be time to switch web browsers.
