Might I ask which front end you are using for ffmpeg? If you use ffmpegX all those options are readily available. http://homepage.mac.com/major4/ You also need to download the individual encoding bits here: http://mjpeg.sourceforge.net/MacOS/mpeg2enc http://sourceforge.net/projects/mplayerosx/ Just start with your source file and configure each of the options you describe above without the need for a DVD intermediate.
