My current process is to edit the raw DV footage in Roxio VideoWave (part of the Easy Creator package but apparently a light version is also bundled with some cameras), save it out as DV again, then use Sorenson Squeeze to compress into SWF and QuickTime Pro 7 to compress into m4v for iTunes.
