Don't think replacing your video display card is going to affect your ability to capture video from your camera. The ATI display card handles playback display only. Unless you have something like an AJA or BlackMagic you wont need a hardware dependent codec. The hard drives should not have anything to do with this either. The Leopard issue I'm not sure about as I am resisting the upgrade for a while.
The Sony should capture basic HDV if I'm not mistaken so FCP should be able to capture this. I would reinstall FCP to try and reinstall the missing codecs. Could be a dodgy firewire cable too. Basically start with the easy/free things first.
