Nice idea. I was also thinking about merging these entries in a Show menu.

Sure.

Hard to decide. In one hand, it's better to enforce the respect of
such license/requirement. But in other hand, it is more interesting to
offer the ability to user to hide such information because it can be
annoying in some situation. Furthermore, as viking is open-source, it
is easy to modify or rebuild.
So, I'm not sure if it's really better to remove the ability to hide
copyright or logo.
