I'm using Vim with a filetype of mail right now, and it's able to do on-the-fly spell-checking :)
A lot of filetypes have special provisions where they turn spell-checking off in certain areas that you don't want to spell-check. I think that the mail filetype turns off spell checking if what you're text is after an arrow (>, >>, etc.). Is that what you're doing? HTH!
