You might try

    set fo+=aw

and see

    :help fo-table

for an explanation of 'a' and 'w'.  In theory, just including 'a' 
should automatically reformat paragraphs as you type, but I found it 
more intrusive and annoying than helpful without also including 'w'.  
Even then it doesn't always behave as I would like, so I use it 
sparingly, e.g., when composing e-mail.
