While I agree with you completely that these points hold when using Vim
to compose a reply, they do not hold when using Vim to browse messages
that have been received from others.  (Too) many people don't use proper
signatures and don't properly trim quoted material; and when using Vim
to view raw messages, e.g. from a Maildir folder, there are usually many
headers.
