For what it's worth, I would never want 'guifont' to be changed by a modeline, and I tend to think 'ambiwidth' should not be settable by a modeline either.
I'll go further and say that in my opinion, any of the options that are global only should not be settable by a modeline. There is just too much potential for it to cause problems.
