I'm not sure I understand what you're asking.  By 'old vim', you mean the
7.2 version that came with Mac OS X that's in /usr/bin?  I think this will
work, just modify the steps you performed to instead be (note the additional
flag on the configure line):

./configure --disable-darwin --enable-gui=no --prefix=/usr
make
sudo make install
