Maybe try jiggling the settings in Advanced Preferences (go to the application
menu, and choose preferences, and then go to the advanced tab). One or two of
those have to do with input methods.

Try
:set noimdisable
(it seems I needed that) then explicitly set your input method (using the
keyboard
layout menu) for Normal mode (e.g. to US), then go into insert mode and change
it
(e.g. to Chinese), and from then on MacVim should automatically change it as you
go in and out of insert mode.
