Sorry, but I have no knowledge of easy mode. I tried 'vim -y'.
When I held down Shift and used the down arrow to select some
lines, the Ctrl-C and Ctrl-V worked perfectly. That is, I could
paste the lines into the same Vim session, and into a different
application, with no extra blank lines occurring.

I realise that answer is even more frustrating than my previous
effort ... I'm not trying to be difficult but I don't recall any
discussion of easy mode here in more than a couple of years.

It might help if you mentioned your operating system, and version
of Vim. Also, what do you Ctrl-V paste into (I infer it's the
same Vim session).

I know you said you have no vimrc, but it might be worth trying
the following command to start (no startup files):

  vim -u NONE -y
